Shrimp Diablo

My friend, Sydney, and I are always exchanging recipes over lunch.  She sent me this one recently after trying herself, and I'm dying to get the chance to make it!  I love spicy seafood, so I know this dish is going to be great!
 
Shrimp Diablo
Ingredients:
1 lb. med. lg. shrimp. Frozen but uncooked. Peeled & deveined.
1 t crushed red pepper flakes
6 T good olive oil
1 1/2 T salt
1/4 C cognac or brandy
4 T minced garlic
1/2 t sugar
28 oz can diced, unflavored tomatoes, drained
1 C dry white wine
1/4 C chopped parsley
1 lb. linguini
1/3 C heavy cream
2 oz. capers, drained & rinsed.

Directions:
1. Get a big pot of salted water on stove to boil. Heat a heavy 12 inch skillet on high for about 4 minutes. This is very important - don't go too fast. The pan needs to be really, really hot. While the pan heats, toss the shrimp with half the red pepper flakes, 2 T of the olive oil and 3/4 t salt. Stir to coat shrimp and let them sit.

2. When pan is ready dump in the shrimp and use a wooden spoon to spread them around in a single layer. Let them sit there for 30 seconds - the bottoms will turn a mottled brown. Remove from the heat and stir the shrimp so the other side is down. Add the brandy and wait a second or two. Put the pan back on the heat and wave a match over the pan until the brandy lights. Watch your eyebrows! Shake the skillet until the flames die down. Pour the whole mess into a holding bowl.

3. Let the skillet cool a bit. Return to a low heat. Add 3 T of the garlic and 3 T of olive oil. Cook the garlic, stirring all the time until it is well cooked - about 6 minutes or until straw colored, not brown.

4. Add the rest of the pepper flakes, 3/4 t salt, sugar, tomatoes and wine. Make sure the tomatoes are drained or you'll have a good tasting but watery sauce. Simmer on medium heat for 8 minutes.

5. While the sauce simmers, add the pasta to the boiling water.

6. Add the shrimp and all their juices, the rest of the garlic and the parsley, Simmer until the shrimp are hot again. Add cream and capers.

7. When the pasta is done, drain - saving 1/3 C of pasta water. Put pasta in a big bowl - add the reserved water back and about 1/2 C of the sauce. Toss well.

8. You can now either add the sauce and serve family style or put the pasta in bowls and top with the sauce.

Smoked Salmon and Veggie Cream Cheese Bagels - from Sally

Sally sent me this recipe from Food Network (Ina Garten) because it reminded her of one of our favorite dishes at Bottletree Bakery in Oxford.  She suggests adding slices of tomatoes, cucumbers, or red onions for some extra flavor and crunch.  At Bottletree, their bagels are also served with capers for extra saltiness.  I will definitely be eating one of these bagels very soon!

Smoked Salmon and Vegetable Cream Cheese Bagels
Ingredients:
2 sesame bagels (toast if desired)
Vegetable Cream Cheese, recipe follows
4 slices smoked salmon

Directions:
Slice the bagels in half horizontally and spread 1 tablespoon of the vegetable cream cheese over the bottom half of each bagel. Arrange 2 slices of smoked salmon over the cream cheese and place the remaining bagel halves on top. Cut the bagels in half crosswise and serve.

Vegetable Cream Cheese:
16 ounces cream cheese, at room temperature
2 tablespoons minced scallions, white and green parts
2 tablespoons finely chopped carrot
2 tablespoons finely chopped celery
2 tablespoons finely chopped radish (2 radishes)
2 to 3 pinches kosher salt
1 pinch finely ground black pepper

Place the cream cheese, scallions, carrot, celery, radish, salt, and pepper in the bowl of an electric mixer fitted with the paddle attachment and mix on low speed until blended.

Shrimp and Avocado Salad on Endive Leaves

This is another recipe from my church's Christmas Countdown event.  This was my favorite dish from the event, and I'm excited about trying it soon.  I think this recipe would be perfect for Spring and Summer gatherings.  It has such good flavor - the sesame seeds and scallions give it an Asian feel, so it would be perfect with sushi! 

Shrimp and Avocado Salad on Endive Leaves
(from Martha Stewart Living)  makes 24
Ingredients:
20 medium shrimp, peeled and deveined
3 tablespoons fresh lime juice (from 3 limes)
2 tablespoons finely chopped scallions (plus more for garnish)
1 jalapeno chile, stem, ribs and seeds removed, finely chopped (2 tablespoons)
1 teaspoon coarse salt
1/2 firm, ripe Hass avocado, pitted and peeled
2 to 3 small Belgian endives
Black sesame seeds, for garnish (optional)

Directions:

Bring a medium pot of water to a boil. Add shrimp, and cook until opaque, about 1 minute. Let cool, cut
into 1/4 inch pieces.

Transfer shrimp to a medium bowl. Add lime juice, chopped scallions, jalapeno, and salt. Stir to combine. Refrigerate for at least 30 minutes or up to 2 hours.  Just before serving, cut avocado into 1/4 inch cubes, and fold into shrimp mixture. Separate endive leaves, and arrange 24 on a platter. Spoon about 1 teaspoon shrimp salad on each leaf. Garnish with sliced scallions and sesame seeds, if desired.

Creamy Shrimp and Mushroom Pasta

I got home earlier than usual from work yesterday, so I actually had time to try a new recipe during the week!  I looked around on pinterest to find something new.  It led me to this great food site - foodgawker.com.  It was so hard to narrow down the choices!  I decided on this pasta dish because of the quick cook time.  It's pretty simple since you can use frozen shrimp and dried herbs.  I'm not usually a fan of creamy pasta sauces, but this one was great because it's not too thick.  We added some Parmesan to thicken up the sauce - it had a wonderful flavor!

Creamy Shrimp and Mushroom Pasta

serves 4, prep 5 min, cook time 30 min
•4-8 oz fettuccine or linguine
•10 tbsp butter, divided (I used 8)
•8 oz fresh, sliced mushrooms
•2 garlic cloves, minced
•3 oz cream cheese, cut into small pieces
•2 tbsp fresh parsley, chopped
•1 tbsp fresh basil, chopped
•2/3 cup boiling water (from your noodle pot)
•1 lb cooked shrimp (I used frozen - but only about 1/2 lb)

1.Boil and salt a large pot of water and cook your pasta. I usually only use about half of an 8 oz box, preferring fewer noodles.

2.While your pasta is cooking, cook your shrimp if necessary and reserve. If your shrimp are pre-cooked and frozen, quickly thaw them under running water.

3.In a large skillet melt 2 tbsp of butter over medium heat and saute mushrooms until soft and brown. Season with salt and pepper.

4.Reserve cooked mushrooms and melt remaining butter in the skillet. Add minced garlic, cream cheese, and herbs. At this point, I generally feel like something has gone terribly wrong. The cream cheese doesn’t really melt and starts to look almost curdled, don’t worry about it! It will all smooth out and be wonderful when we add the water. I promise.

5.Simmer cream cheese mixture until well blended. Get a scoop of boiling pasta water from your noodle pot and mix it in, stirring quickly to smooth out the sauce.

6.Keep sauce hot and add shrimp and mushrooms, mix well and simmer (stirring often) until everything is hot and thickened, about 10 minutes-you wont ruin this sauce by accidentally boiling it so don’t worry.

7.Toss sauce with cooked noodles and serve.

Warm Crab Dip - from Gretchen

My friend, Gretchen, made this dish recently to bring to a cookout.  It was such a big hit - everyone kept going back for more (especially me!).  It makes a great appetizer for any meal and would be a wonderful dish for a late Fall football party.

Warm Crab Dip
Ingredients:
2 (8oz) packages of cream cheese, softened
1 cup shredded sharp cheddar cheese
1/4 cup mayo
1 tbsp dijon mustard
1 tsp lemon juice
1 chopped green onion
1 lb flaked crab meat

Directions:
Preheat oven to 350 degrees. Coat a 1 1/2 quart casserole dish with nonstick spray.  In a bowl, mix cream cheese, mayo, mustard, lemon juice, and 3/4 cup of the cheddar cheese until smooth (I usually add more cheddar.)  Stir in the green onion and crab meat. Pour into the casserole dish and top with the remaining cheddar.... (again, I add more).  Bake in oven for 30 minutes.  Serve with crackers.

Hush Puppies!

I know I haven't posted as much lately, but there has been a lot going on around here!  For instance, we've had tons of fun going to several crawfish boils this spring!  We loved going to crawfish boils when we lived in Oxford, but haven't been to many since then.  We went to one at a friend's farm in early spring, one in our neighborhood in May, and then one with our Sunday School friends last weekend - so fun!  We decided to try making a few dozen hush puppies to take with us to our recent SS crawfish boil.  They were a big hit, so I wanted to share the recipe.  These would be great with seafood all summer!

Jalapeno Hushpuppies (By Emeril Lagasse)

Ingredients:

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoons hot sauce
  • 1/4 cup minced onions
  • 2 fresh jalapenos, minced
  • 2 eggs, beaten
  • 1/2 cup milk
  • Essence, recipe follows

Directions:

Preheat the fryer to 365 degrees. In a mixing bowl, combine the cornmeal, flour, baking powder, salt, hot sauce, onions, and jalapenos, together. Stir in the eggs and milk. Mix until fully incorporated. Fry 1 tablespoon of the batter at a time. Fry the hushpuppies for 2-3 minutes or until they are golden brown. Stirring constantly will ensure over-all browning. Remove from the oil and drain on a paper-lined plate. Season with Essence.

Essence (Emeril's Creole Seasoning):

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried leaf oregano
  • 1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

Whole Wheat Spaghetti with Lemon, Basil, and Salmon

I know, I've been such a bad blogger lately!  Things seem to have gotten a little crazy, so I haven't had as much time to try new recipes lately.  But, I did want to go ahead and share the pasta side that we made on Easter to go with our salmon (we made the salmon following a different recipe that I mentioned last time, but they are very similar).  The pasta had a soft flavor and didn't overpower the fish.  It definitely works well pared with other dishes.

Whole Wheat Spaghetti with Lemon, Basil, and Salmon
Ingredients:
1/2 pound whole-wheat spaghetti pasta
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 tablespoon olive oil
4 (4 oz) pieces salmon
1/4 cup chopped fresh basil leaves
3 tablespoons capers
1 lemon, zested
2 tablespoons lemon juice
2 cups fresh baby spinach leaves

Directions:
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and transfer to a large bowl. Add the garlic, extra-virgin olive oil, salt, and pepper. Toss to combine.

Meanwhile, warm the olive oil in a medium skillet over medium-high heat. Season the salmon with salt and pepper. Add the fish to the pan and cook until medium-rare, about 2 minutes per side, depending on the thickness of the fish. Remove the salmon from the pan.

Add the basil, capers, lemon zest, and lemon juice to the spaghetti mixture and toss to combine. Set out 4 serving plates or shallow bowls. Place 1/2 cup spinach in each bowl. Top with 1/4 of the pasta. Top each mound of pasta with a piece of salmon. Serve immediately.

Honey Mustard Glazed Salmon Fillets

This is a great quick and easy salmon dish. Sometimes I feel like fish can be a difficult menu item to tackle. But, this recipe is super simple and can be made any night of the week. It is plated in the picture with an orzo salad. The recipe for the salad can be found here. Both recipes are from Food Network chef, Robin Miller.

Honey Mustard Glazed Salmon Fillets
Ingredients:
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon finely grated lemon zest
4 (5-ounce) salmon fillets
Salt and ground black pepper
Cooking spray

Directions:
In an oiled shallow baking dish, combine lemon juice, Dijon, honey, and lemon zest. Stir together. Season both sides of salmon fillets with salt and pepper and place in the baking dish. Flip salmon to coat in glaze.

Bake immediately or cover with plastic wrap and refrigerate for up to 3 hours. When ready to cook, preheat oven to 400 degrees F. Bake 10 minutes or until fish is fork-tender.

City Grocery Shrimp and Grits

City Grocery is a wonderful restaurant in downtown Oxford, Mississippi on the square. Head chef and owner, John Currence, is a celebrated chef throughout the South and contributing editor for Garden and Gun magazine. He won the 2009 James Beard Best Southern Chef award. He also owns Boure (Southern Cajun food) and Big Bad Breakfast (breakfast food - and lots of it). For those of you in Birmingham, word is that there will be a new restaurant opening in Mountain Brook by an Oxford native that models Big Bad Breakfast with its fresh local ingredients and original recipes. This recipe of Shrimp and Grits is probably City Grocery's most famous dish. I promise it will be a new favorite!

City Grocery Shrimp and Grits
Ingredients:
Grits:
1-cup quick-cook grits
4 Tbs. Unsalted butter
¾ cup extra-sharp white cheddar
½ cup grated Parmesan cheese
1 tsp cayenne pepper
1 ½ Tbs paprika
1 tsp Tabasco
Salt and pepper to taste

Shrimp:
2 cups chopped smoked bacon
3 Tbs olive oil
1 ½ lbs. of 26-30 count shrimp (peeled)
Salt and black pepper to taste
3 tsp minced garlic
3 cups sliced white mushrooms
3 tbs white wine
2 Tbs lemon juice
2 cups sliced scallions

Directions:
Cook grits according to instructions on package. As grits are finishing, whisk in butter, cheddar, Parmesan, cayenne, paprika and Tabasco. After all ingredients are incorporated, season with salt and pepper. Keep warm until shrimp are ready.

Cook bacon until it begins to brown; remove from heat, strain and reserve bacon grease and bacon bits.

Heat a large skillet until very hot, and add olive oil and 2 tbs bacon fat. As oil begins to smoke, toss in shrimp to cover bottom of pan. Before stirring, season with salt and pepper.

Stir until shrimp begin to turn pink all over (let pan return to original hot temperature).

Stir in minced garlic and bacon bits, being careful not to burn garlic. Toss in mushrooms, and coat with oil briefly.

Add lemon juice and wine; stir for 30 seconds or until everything is well coated.

Assuming that this is ready to be served, toss in sliced scallions and stir for about 30 seconds. (If these are added too long before serving, they will begin to turn brown and loose their crunch).

Serve over cheese grits.

Salmon with Lemon, Capers, and Rosemary

I'll go ahead and say it - I'm not normally a huge fan of fish. But, Kent and I have made this recipe several times, and I always really love it. With the lemon, capers, and rosemary it ends up tasting really light and not too fishy. It's also really easy and requires very little clean up!

Salmon with Lemon, Capers, and Rosemary

Ingredients:
4 (6-ounce) salmon fillets
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon minced fresh rosemary leaves
8 lemon slices (about 2 lemons)
1/4 cup lemon juice (about 1 lemon)
1/2 cup dry white wine
4 teaspoons capers
4 pieces of aluminum foil

Directions:
Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

Lemon Pasta with Roasted Shrimp - from Sally

Sally sent me this recipe by Ina Garten a few weeks ago. Ina Garten is one of my favorite Food Network chefs - her recipes always use understated and simple flavors. This is a great recipe that can be made any night of the week in just a few minutes.

Lemon Pasta with Roasted Shrimp
Ingredients:
2 pounds (17 to 21 count*) shrimp, peeled and deveined
Good olive oil
Kosher salt and freshly ground black pepper
1 pound angel hair pasta
4 tablespoons (1/2 stick) unsalted butter, melted
2 lemons, zested and juiced

Directions:
Preheat the oven to 400 degrees F.
Place the shrimp on a sheet pan with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Toss well, spread them in 1 layer, and roast for 6 to 8 minutes, just until they're pink and cooked through.
Meanwhile, drizzle some olive oil in a large pot of boiling salted water, add the angel hair, and cook al dente, about 3 minutes. Drain the pasta, reserving some of the cooking liquid. Quickly toss the angel hair with the melted butter, 1/4 cup olive oil, the lemon zest, lemon juice, 2 teaspoons salt, 1 teaspoon pepper and about 1/2 cup of the reserved cooking liquid. Add the shrimp and serve hot.

*Note: Count refers to the number of shrimp in one pound. So the lower the number, the bigger the individual shrimp.

After reading some of the reviews, I saw that some people thought the sauce was a little tart from the lemons. You can definitely cut down on those. Also, some people suggested using garlic, parsley, and/or parmesan cheese to give it a little more flavor. Overall, the reviews said that it was wonderful and a new favorite. Everyone seemed to love the idea of roasting the shrimp and said they turned out perfectly.
